This came from the WW website. I pretty much made it exactly like the recipe, but I made 1/4 because I was eating it for lunch. Very filling - and only 6 pts!
1 spray cooking spray
1 TSP olive oil
1 small onion
1 and 1/8 cup frozen mixed vegetables
1 TBSP cilantro
1 cup fat-free canned refried beans
4 large burrito-size wheat flour tortillas
1/2 cup shredded reduced-fat Mexican style cheese
1/2 cup salsa
Coat nonstick skillet with spray and set over medium-high. Add oil and heat until it sizzles. Saute onions for 3 min. Add veggies and cilantro and saute for 3 more minutes.
Spread 1/4 cup of beans down the middle of each tortilla and sprinkle with cheese. Top with 1/4 cup of the veggie mix.
Fold ends in, then one side to the center, and the other side to the center. Microwave 1-2 minutes per burrito. Top with salsa.
Serves 4. WWPP 6 per serving.
I added a side of carrots with mine, which I dipped in the salsa instead of putting it on top of the burrito.
