Entertaining with WW - Part Four - Cherry Chutney and Manchego with Naan

So, I saved the best Indian-inspired recipe for last.  I am so not into spicy things, but this had just enough kick to delight the tastebuds without being too hot for me.  Before making this I had never had chutney, manchego, or Naan, but I have to say I am now a big fan of all three!

I found all of these items at Meijer.  The Manchego cheese was in the specialty cheese section and cost about $6.50 for a large wedge.  It has a very mild flavor, and you could easily substitute another hard white cheese.  The Naan was in the bakery section and was very inexpensive.  If you can't find naan, you could easily substitute pita bread.

1 TSP canola oil
1 small red onion, finely chopped
1 cup pitted tart cherries (I used thawed frozen cherries)
1/4 cup apple cider vinegar
3 TBSP packed brown sugar
1 TBSP minced peeled fresh ginger
1/2 TSP mustard seeds
1/4 TSP red pepper flakes
Pinch of salt
1 (4oz) whole wheat naan bread, cut into wedges and toasted
2 oz Manchego cheese, cut into thin slices

Heat oil in medium saucepan over medium heat.  Add onion and cook until softened (about 5 minutes).

Add cherries, vinegar, brown sugar, ginger, mustard seeds, pepper flakes, and salt and bring to a boil.  Reduce heat and simmer, partially covered, until chutney is slightly thickened (12-15 minutes).  Transfer to bowl and let cool to room temperature.  Serve with naan wedges and Manchego.

Serves 4 (3 TBSP chutney with 3 Naan wedges and 1/2 oz. cheese)............................................5 pts.
